A delicious treat : Mint aero cupcakes.

Inspired by the classic chocolate bar, these Mint aero cupcakes are choc full of chocolate and minty goodness for a tasty batch of cupcakes. Finished off with a generous chunk of the chocolate itself on top, these delicious cupcakes certainly look the part.

Ingredients (makes a dozen cupcakes)
  100g self raising flour
  40g cocoa powder
  140g caster sugar
  1 egg
  120ml milk
  40g butter

For the buttercream
  100g butter
  200g icing sugar
  2 tsp peppermint extract
  drop of green food colouring

Pre heat oven to 180c/160c fan/gas mark 4, and place your cupcake cases into a baking tray.

Mix together the flour, cocoa powder, sugar and butter to a powdery mixture, you may want to break the butter down using the back of a spoon.

Whisk the egg with the milk in a jug, then slowly pour this into the dry mixture and blend together.

Spoon the mixture into the cupcake cases, then turn the oven down a notch before baking (i.e 150c for a fan oven), this gives the cupcakes a nice flat top. Bake for 15 minutes, until risen.

Leave to cool on a wire rack, then mix together the buttercream.

Whisk together the butter and half of the icing sugar until combined, sift in the remaining icing sugar and whisk until blended. Add in the peppermint extract, dependent on how strong a minty taste you like you may want to add just 1 tsp or 2 tsp's, and blend to taste.

Add in a drop of green food colouring, I used Sugarflair's Mint green food colouring paste, you'll only want to add a small amount if you are using a colouring paste to achieve a lovely minty green colour. If you're using a liquid food colouring you may need to add 1-2 tsp's. Whisk until well combined.

Spoon the buttercream into a piping bag, then pipe swirls on top of each cupcake. Finish off with a chunk of mint aero chocolate.
