Chai latte cupcakes.

For those of you that love a good cup of chai, these cupcakes make for a deliciously sweet spiced treat, infused with the yummy flavours of the drink. Why not whip up a batch and over indulge with a mug of chai tea alongside!

Ingredients (makes 12 cupcakes)
  175g butter
  175g caster sugar
  3 eggs
  175g self raising flour
  1 tsp ground cinnamon
  1 tsp ground ginger

For the frosting
  120g butter
  300g icing sugar
  1 tsp ground cinnamon
  1/2 tsp ground ginger
  1 tsp vanilla extract
  2-3 tbsp milk

Pre heat the oven to 180/160c fan/gas mark 4 and line a cupcake tray with cases.

Cream together the butter and sugar till pale and fluffy, then add in the eggs one at a time and beat.

Sift in the flour, cinnamon and ginger and mix till combined, then spoon the mixture into the cupcakes cases, filling each around 2/3 full. Bake for 20-25 minutes till golden and risen, then place on a wire rack to cool down.

To make the frosting, mix together the butter with half of the icing sugar till combined, then sift in the rest of the icing sugar, along with the cinnamon and ginger and beat till combined. Add the vanilla extract and mix, then add in the milk to loosen the mixture and beat for 2-3 minutes, this will result in a lovely light and creamy frosting.

Spoon the frosting into a piping bag and pipe swirls of frosting on top of each cupcake to finish.
